Easy nutty coconut cake

This will satisfy the sweet tooth, and lasts through the week. Whack the oven on to 200deg Celsius, get a bowl and mix:

4 eggs
1 can coconut milk
1 bag shredded coconut (300-400g)
1 cup bashed up nuts (walnuts, almonds, pine nuts etc)
200g melted butter
Extra coconut oil if required
Big spoon honey (because I have some Manuka from back home in NZ!)
Chopped fruit if required (banana, apple, berries etc)

Add all ingredients to a bowl and mix well, using extra coconut or almond flour if too runny. Pour in tin and bake for 20-25mins. Check with a knife to see if done. It will be sticky, but that´s all good.
Serve with whipped cream, probiotic yoghurt, blueberries, cinnamon, and a cup of your favorite tea. NICE!.
